Pesto Sauce

This low fat version of a great Italian sauce can be used in a variety of way including over macaroni, as stuffing mixed with sun dried or as a substitute in any recipe you find.
1 c. loosely packed fresh cilantro leaves
1/2 c. loosely packed frest flat-leaf parsley leaves (can use curly variety)
1/2 c. loosely packed fresh basil leaves
1/4 c. sliced scallions
2 cloves garlic, cut into pieces
juice of 1 lime
2 tsp. oilive oil
1/4 tsp. salt
1/4 c. reduced sodium chicken broth
1 Tbsp. grated Romano or Parmesan cheese
- In a food processor, combine all ingredients except broth and cheese. Process for aobut 15 seconds until all are finely chopped
- While processing, gradually add additional broth
- Stir in cheese.
This dresssing will last awhile in the refrigerator. If you use 3 or more Tbsp, count it as 1 point. 4 pts for entire recipe
